The results are in...

I know you've all been waiting for me to elaborate on my personal chicken challenge from last week. Well, the results are in and I made it! I successfully made six meals for all of us, with leftovers for Jon's lunch, without buying any more groceries and using only one chicken! Here's a run-down of everything we had this past week:

  • Chicken and rice with veggies
  • Chicken tacos 
  • Alfredo with chicken, zucchini, and yellow squash
  • Chicken and veggie spaghetti
  • Chicken and veggie stir-fry with rice
  • Chicken and noodles (pot-pie filling with German spaetzle)
This is usually one that I really enjoy and Jonny just likes, but he really liked it this time! Whatever I did differently this time, I'll  have to repeat it next time!
And in fact, we had so many leftovers that Jon is still eating them for lunch, I had leftovers for lunch one day, and Jonny, Pammy, and I all had leftovers for lunch Sunday afternoon. On top of all that, we had company for dinner one night!
