Meals on Hand: Mexican Edition

I'm a big fan of meals that use up leftovers and don't require getting anything new from the store. Last night I did just that to create a Mexican take on grilled cheese and tomato soup. Here's the recipe:

Tomato-Salsa Soup:
1 can condensed tomato soup
1 soup can of milk
1 small jar of medium salsa
sour cream

Blend together and heat through. And yes - I have a gadget for that: the KitchenAid Immersion Blender (and it's red, of course). Add a dollop of sour cream to each bowl of soup.

Taco Quesadillas:
flour tortillas
shredded Mexican style cheese
ground beef
taco seasoning

Brown ground beef and prepare according to taco seasoning package. Melt cheese and and taco meat between two tortillas, browning on both sides. Slice and serve with soup.
